Until very recently, food preservation was a crucial daily endeavor that required a great deal of ingenuity to prevent food from quickly spoiling. Even today, a large percentage of the food supply is wasted, despite modern refrigeration technologies. This course will explore the history of food preservation and the evolution of kitchen appliances, including those that are specifically designed with new technologies to optimize food preservation.
